Kashmiri red chillies valued more for their vivid colour than heat, sun-dried whole to keep their deep red hue intact. Soak and grind them fresh for a rich, restaurant-style gravy colour without the sharp spiciness of hotter varieties. No added colour or preservatives, the red comes entirely from the chilli itself.
