Varagu, or kodo millet, is a light, high-fibre grain that has traditionally been part of Tamil Nadu's everyday and fasting-day cooking. Kept raw and minimally processed, it cooks up soft and works well in upma, pongal, or as a rice substitute. A naturally gluten-free grain suited to a balanced daily diet.
