Thooyamalli is a fragrant native short-grain rice variety, and flattened into poha it keeps a soft, aromatic quality that stands out in a simple lemon poha or a lightly sweetened preparation. It cooks quickly with just a brief rinse, needing no long soaking or steaming. No added sugar or preservatives, just traditionally milled Thooyamalli rice pressed flat.
