Mappillai samba is a native red rice variety once grown for its strength-giving properties, and this puttu mix is milled from the whole grain to preserve its russet colour and dense, nutty bite. Red rice carries more fibre than polished white rice, and as a rice-based mix it's naturally gluten-free. Layer it with coconut in the puttu maker for a heartier version of the everyday steamed breakfast.
