Mace, the delicate lacy covering of the nutmeg seed, sun-dried and sold whole to preserve its warm, slightly sweet aroma. Used sparingly in biryani, garam masala, and rich gravies, it adds a depth that ground nutmeg alone doesn't quite replicate. Cleaned by hand with no bleaching or added colour.
