Little millet, called saamai, is one of the smallest and quickest-cooking traditional grains, and flattened into poha it turns almost creamy when soaked briefly in warm water. Its mild flavour takes well to both a simple tempered breakfast and a lightly sweetened jaggery version. No added sugar or preservatives, just the millet flattened the traditional way.
