Foxtail millet, known as thinai, is one of the earliest cultivated grains in Tamil Nadu, and flattened into poha it has a light, delicate texture that cooks in minutes. Its mild flavour pairs well with a simple vegetable tempering or a touch of jaggery for a lightly sweet breakfast. No added sugar or preservatives, just the traditional millet pressed flat.
