Small, bitter-edged fenugreek seeds, cleaned and sun-dried the traditional way so they roast evenly without turning acrid. A few seeds in tempering round out sambar and kuzhambu, while a light dry-roast and grind gives you the base for vendhaya podi. Sold whole to keep them fresher for longer than pre-ground fenugreek.
