Small ajwain seeds with a sharp, thyme-like aroma, sun-dried and cleaned without any polishing or added preservatives. A pinch in tempering settles heavy dishes like parathas and pakoras, and it's a traditional favourite steeped in warm water after meals. Roast lightly before use to bring out its full aroma.
